Banana Bread Muffins
-200g oat flour
-125g (1/3 cup) golden syrup or your choice of sticky sweetener
-1 tsp cinnamon
-1/2 tsp vanilla extract
-2 tsp baking powder
-1 (15g) chia egg
-3 bananas (270g), mashed
-70g (1/4cup) nut butter
-100ml plant milk or water
-In a large bowl, place all of your wet ingredients and mix well.
-Then in the same bowl, add in all of the dry ingredients, and give it another good stir.
-Pour the batter into your muffin trays lined with muffin liners, and pop them into the oven at 180C for 25-30 minutes.
-Once fully cooked, take them out and let them rest & cool on the counter for about 10 minutes, then enjoy!
