Blackberry Breakfast Muffins

INGREDIENTS:

-200g oat flour

-1 cup non-dairy milk + 1/2 cup water

-1/3 cup golden syrup (or your choice of syrup sweetener)

-1 chia or flax "egg"

-1 tsp vanilla extract

-1/4 cup natural peanut butter

-2 tsp baking powder

-1/3 cup frozen blackberries

DIRECTIONS:

-In a large bowl, mix together all ingredients very well until smooth.

-Pour the batter into your muffin tray lined with muffin liners/case. 

-On top of each muffin add in a few extra berries.

-Then pop them into the oven at 180C for 25-35 minutes, (or until fully cooked and golden on top). 

-Let cool, then enjoy!
