Chewy Chocolate Chunk Fig Bars

INGREDIENTS:
-200g dried figs
-85g nut/seed butter
-50g puffed wheat
-70g pumpkin seeds
-19g chia seeds
-20g golden linseed
-1/2 tsp sea salt
-1 tsp cinnamon
-35g non-dairy dark chocolate (5 squares)

DIRECTIONS:
-Soak the dried figs in warm water for 30 minutes to soften. Then drain the water.
-Place the figs and peanut butter in a blender or food processor, and blend it up smooth, to form a sticky paste.
-In a large mixing bowl, combine the puffed wheat, seeds, salt, and cinnamon. Combine it well.
-Add the fig paste and mix.
-Sprinkle the chocolate chunks on top, and spread them out evenly.
-Press into pan lined with parchment paper.
-Place into the fridge to firm up for at least two hours. Then slice into bars and enjoy!
