Chewy Pumpkin Chocolate Chip Cookies

INGREDIENTS:

-250G pumpkin puree

-250g date paste

-200g all purpose flour

-1 tsp cinnamon powder

-110ml nut milk

-1.5 tsp baking powder

-45g non-dairy chocolate chips

DIRECTIONS:

-Place all of these ingredients, except for the chocolate chips, into your blender or food processor, and blend it all up smooth. 

-Now throw in the chocolate chips and stir them in well.

-Scoop out 2 tbsps worth of the mixture and place it onto your baking tray lined with parchment paper, and smooth out into your cookie shapes. Repeat until you have used all the cookie batter.

-Pop them into your oven at 200C for 15-20 minutes. 

-Let them cool, then enjoy.
