Chocolate Chunk Peanut Butter Balls

INGREDIENTS:
-175g dates (pitted & soaked in hot water)
-60g natural peanut butter
-200g oats
-1/2 tsp cinnamon powder
-45g non-dairy chocolate, chopped

DIRECTIONS:
-In your food processor or high speed blender, add the oats, dates, peanut butter and cinnamon. Blend together until it forms a large dough ball.
-Now sprinkle in the cacao nibs or chocolate chips. And fold them in until combined well.
-Scoop out about a golf ball size of the mixture, and using your hands, roll it into a little ball.
-Do this until all the mixture is used.
-Pop these Chocolate Chip Peanut Butter Balls into the fridge for 2-3 hours to firm up.
-And then you can enjoy!
