Chocolate Chunk Banana Bread Muffins
-225g almond flour OR gluten free oat flour
-185g (2) ripe bananas
-50g natural peanut butter
-100g pure maple syrup
-1 tsp cinnamon powder
-20g milled chia seeds OR flax seeds
-1 tsp baking powder
-40g raw cacao nibs OR non-dairy dark chocolate, chopped
-Pre-heat the oven to 200C.
Place the wet ingredients into your mixing bowl. Mix it well.
-Now add in the dry ingredients and combine it with the wet.
-Then you can fold in the chocolate chunks.
-Pour this mixture into your muffin trays lined with muffin/cupcake liners, and sprinkle on top some more chocolate chunks if desired.
-Pop this into the oven to bake for 20-30 minutes.
-Let it cool for about 10 minutes before enjoying!
