Chocolate Chunk Cookie Dough Bars

INGREDIENTS:
Base:
-150g dates, pitted and soaked in hot water
-100g oats
Filling:
-150g dates, pitted and soaked in hot water
-60g oats
-240g butter beans
-50g peanut butter (or nut/seed butter of your choice)
-1 tsp cinnamon powder

-20g raw cacao nibs

Topped with:
-30g of non-dairy dark chocolate, chopped

DIRECTIONS:
-For the base; place the oats and dates into your food processor, and blend it up until it forms a dough ball.
-Then take this dough ball, and press it out neatly into your baking loaf pan lined with parchment paper. Set aside.
-Place all the filling ingredients (except the cacao nibs) into your food processor, blend until creamy smooth.
-Now mix in the cacao nibs.
-Pour this mixture on top of the base in your baking loaf pan, and smooth it out with a large spoon or spatula.
-Sprinkle on top a the dark chocolate chunks.
-Pop this into the freezer for 2-3 hours to firm.
-Then slice it into bars and enjoy!
