Chocolate Covered Oatmeal Bars

INGREDIENTS:
-200g rolled oats
-125g oat flour
-90g date paste
-1 tsp cinnamon powder
-50g natural peanut butter
-280g unsweetened applesauce OR mashed banana
-1 tsp vanilla extract
-30g raw cacao nibs/vegan chocolate chips
Chocolate Topping:
-80g ripe banana 
-5g cacao powder

DIRECTIONS:
-Preheat the oven to 200C.
-In a large mixing bowl, stir together the oats, oat flour, cinnamon powder.
-Add the mashed bananas, peanut butter, date paste, raw cacao nibs or chocolate chips, and vanilla (optional). Mix to combine well.
-Pour the mixture into a baking loaf pan lined with parchment paper. Smooth it out evenly. Set aside.
-Blend the banana and cocoa powder in your blender, until smooth.
-Pour this on top of the oatmeal bars and smooth it over neatly.
-Pop it into the oven to bake for 25-30 minutes at 200C.
-Remove from the oven and let it cool for about 15 minutes.
-Then slice them up, and enjoy!
