Fudge Coconut Truffles

INGREDIENTS:
-200g instant oats
-175g dates (chopped and soaked in hot water)
-50g natural peanut butter
-20g cocoa powder
-1/2 tsp vanilla extract
-20g coconut shreds

DIRECTIONS:
-First drain the water from the dates. Then in your food processor or high speed blender, add the oats, dates, peanut butter, cocoa powder and vanilla extract. Blend together until it forms a large dough ball.
-Scoop out about a golf ball size of the mixture, and using your hands, roll it into a little ball.
-Roll your little truffles into the coconut shreds.
-Do this until all the mixture is used.
-Pop the truffles into the fridge for 2-3 hours to firm up.
-And then you can enjoy!
