Soft Peanut Butter Cookies

INGREDIENTS:

-3/4 cup (180g) natural peanut butter
-1 tsp baking powder/soda
-1/3 cup (60g) flour (spelt, white, oat, rice all work well)
-1/3 cup (60g) brown sugar, unrefined if desired
-1/2 tsp pure vanilla extract
-145ml plant milk
-pinch of salt if desired

DIRECTIONS:

-Mix together the wet ingredients. Once combined smooth, you can add in the dry ingredients and mix well.

-Now you can scoop out some of the mixture and roll into balls.

-Lay the balls out on your tray lined with parchment paper. Using a fork, press down on each of the balls.

-Then pop into the oven to bake at 180C for 10-15 minutes, until soft golden brown.

-Take out to cool, then enjoy!
