Sweet Potato Raisin Cookies
-325g sweet potato, steamed, mashed
-150g gluten free oat flour
-50g natural peanut butter
-65g maple syrup
-1 tsp cinnamon powder
-1 tsp baking powder
-Preheat your oven to 200C.
-Add the wet ingredients into your mixing bowl, and whisk together.
-Then add the dry ingredients and mix together until fully blended.
-Scoop out a golf ball size of the mixture, and mold into your cookie shapes and place them onto your tray lined with parchment paper.
-Pop them into the oven to bake for 12-15 minutes.
-Let them cool for 10 minutes, then tuck in!
